Trying to make room in the freezer? Time to make soup! This is our Freezer Minestrone in a crockpot for tomorrow’s lunch. It has green beans, purple beans, roasted tomatoes, canned stewed tomatoes from a few years ago, walking onions, pesto, celery, corn, lots of garlic, small bag of okra, spinach.
The green beans and corn are leftovers that got stored in the freezer. The garlic is the processed garlic in water you get from the grocery store. We add a heaping tablespoon to each soup. Everything else is from the garden!
When each crop is ready, we use what we can right away. Everything else gets processed and stored in the freezer for winter soups.
